Kathryn Joel will teach you how to make a batch of deliciously cheesy Gougères (aka Cheese Puffs) then Elyse Chatterton will take over to teach you how to make Profiteroles, filled with a chantilly cream and topped with chocolate. You'll end your class with savoury and sweet choux puffs that you can eat or keep - we'll be talking you through how to freeze and reheat your choux pastry puffs too.

All Puffed Up: Puff Pastry Basics

Just in time for your holiday parties, the recipes in Kathryn Joel's class on Puff Pastry Basics are designed for easy entertaining. Using store-bought all butter puff, you'll learn to whip up a Caramelized Onion & Goat's Cheese Tart that you can cut up to serve as Canapés, or enjoy in heartier slices for dinner or lunch. Next we'll assemble a tray of Cheese Straws, elevated with a twist of prosciutto and aged cheese. Then you'll learn to make Palmiers, both savoury and sweet. A classic French pastry bite, Palmiers are guaranteed to capture your heart.

Cheese Please! Cheesy Appies for Your Holiday Table

Join our cheese expert Aditya Raghavan for this very seasonal class on cheesy appies. Addie will walk you through how to make a classic Cheese Fondue, and talk about variations to the classic too. He'll also teach you how to bake Brie, in a cast iron pan, and guide you through the perfect condiments to serve with it. Then you'll learn to bread and fry Taleggio, and serve it with truffle scented honey. And as if that's not enough cheese for you, you'll learn to make an elegant canapé of blue cheese stuffed figs, wrapped in bacon and roasted, too. You'll end your class with new recipes and skills to add to your repertory for both holiday entertaining, and après-ski. Plus you'll have a very cheesy meal to enjoy if you cook along with Addie!
