Join Kathryn to learn how to use up your leftover risotto, the Italian way. We’ll be hand rolling our leftover Risotto into Arancini, delicious stuffed and deep fried risotto balls. We’ll be using a cheese stuffing, but we’ll talk you through alternatives too. Plus we’ll teach you our favourite Arrabiata Sauce to serve with your Arancini. And if you’d like to make the risotto with us, join us for our Risotto class at 6. You can make a squash risotto with us, or a simple saffron Risotto instead, we’ll tell you how.
Ingredients for Saffron Risotto*: risotto rice (carnaroli or vialone nano), butter, olive oil, shallots, vegetable or chicken stock, saffron, Italian white wine, parmesan, lemon.
Options for Arancini fillings*: fresh mozzarella can be combined with any of the following – pancetta, prosciutto, truffle oil, fresh herbs, lemon zest, sundried tomatoes, leeks, black olives, cherry tomatoes, anchovies, leftover ragu, braised and pulled beef or pork.
Ingredients for Arancini Breading*: all-purpose flour, eggs, fine dried breadcrumbs (we use panko).
Ingredients for Arrabiata Sauce*: garlic, red chili, fresh basil, roma tomatoes (we like to see San Marzano, available at the Italian Centre in Edmonton and Calgary), extra virgin olive oil.
* Please note that we will be discussing potential substitutions for ingredients during your class.
Class Fee: $20.00 plus GST (pricing is per device and allows multiple participants to attend using a single device). What’s Included: A 60 minute virtual class plus a recipe pack including info on equipment needed. Our recipes are distributed manually. If you sign up within 24 hours of your class time, you may not receive the recipe in advance. We will attach it in Zoom Chat at the start of your class. Software Requirement: We are using Zoom for our virtual classes. If you aren’t already using Zoom you can download their free app for Windows, Mac, Android or Apple iOS here. Upon purchase, your meeting ID and password will be included in your Event Confirmation email – please be sure to save this information as you will need it to join your class.

Once downloaded Zoom will help you set up your free account then you’re ready to join us. Zoom will prompt you and ask for permission to use your devices camera and audio, please accept the requests. Once logged in click “Join” from the home page and enter your Meeting ID, which will be sent to you by email with your recipes.
