Beef Tartare is a favourite in our kitchen, the perfect Appetizer for a date night or a special meal. We’ll take you through our classic French preparation and talk about variations too. We’ll be hand cutting our steak as we talk about what cuts of beef you can use, then serving our Tartare on Crostini finished with a fried Quail’s Egg. And to continue on a European theme, you can join us at 6:30 for our class on cooking Duck Breasts, together with a Tarte Tatin.
Ingredients for Beef Tartare*: 100g beef tenderloin (or eye of round), truffle oil (we prefer white truffle oil), extra virgin olive oil, shallots, chives, capers, salt and black pepper, lemon juice, crostini or potato roetis (to serve), fried quail’s eggs to finish (optional).
Ingredients for Crostini*: baguette, extra-virgin olive oil.
Ingredients for Fried Quail’s Eggs*: quail’s eggs, grapeseed or canola oil, maldon sea salt (or use kosher salt).
Ingredients for Potato Roestis*: russet potatoes, salt, canola or grapeseed oil, egg white.
* Please note that we will be discussing potential substitutions for ingredients during your class.
Class Fee: $20.00 plus GST (pricing is per device and allows multiple participants to attend using a single device). Your Fee Includes: A 60 minute cooking class plus a recipe pack including info on equipment needed. Our recipes are distributed manually. If you sign up within 24 hours of your class time, you may not receive the recipe in advance. We will attach it in Zoom Chat at the start of your class. Please use the ingredient list above to shop for your class.
Software Requirement: We are using Zoom for our virtual classes. If you aren’t already using Zoom you can download their free app for Windows, Mac, Android or Apple iOS here. Upon purchase, your meeting ID and password will be included in your Event Confirmation email – please be sure to save this information as you will need it to join your class.

Once downloaded Zoom will help you set up your free account then you’re ready to join us. Zoom will prompt you and ask for permission to use your devices camera and audio, please accept the requests. Once logged in click “Join” from the home page and enter your Meeting ID, which will be sent to you by email with your recipes.
