Virtual Cooking Class: Butchery & Cookery – Beef Tenderloin

Beef Tenderloin is a favourite cut of beef for many. But it is so often misunderstood, and misused. So our in-house butcher Elyse is combining her talents with Chef Kathryn for this virtual cooking class on mastering Beef Tenderloin. Together Elyse and Kathryn will teach you how to trim and portion a whole tenderloin for maximum yield and enjoyment. During your online cooking class Elyse will teach you how to break your tenderloin into steaks, fillet and trim, then Kathryn will teach you some favourite ways to prepare and cook your tenderloin as she talks you through a simple Beef Tartare as well as how to assemble a Beef Wellington, and to pan sear Tenderloin Steaks and finish them with a Wild Mushroom Pan Sauce.

Ingredients for Beef Wellington: 1 1/2 to 2 lbs well-trimmed center cut fillet or beef, grapeseed or canola oil, crimini mushrooms, shallot, garlic, fresh thyme, dry white wine, Dijon mustard, prosciutto, puff pastry (all butter preferred), egg.

Ingredients for Beef Medallions with Morel Mushrooms: thick beef tenderloin medallions, olive oil, butter, morel mushrooms (dried or fresh, or you can substitute with your favorite mushrooms), thyme, shallots, Marsala (or can use brandy or cognac), heavy cream or crème fraiche, beef stock (or mushroom soaking liquid), lemon, to serve: oven roasted new potatoes and pan seared greens.

Ingredients for Beef Tartare: 100 g beef tenderloin, or eye of round, truffle oil (we prefer white truffle oil), extra virgin olive oil, shallots, chives, capers, lemon, crostini (baguette, extra virgin olive oil) or Potato Roestis (russet potatoes, canola or grapeseed oil, egg white) to serve, Fried Quail’s Eggs – optional garnish (quail’s eggs, grapeseed or canola oil, maldon sea salt or kosher salt).

Class Fee: $27.50 plus GST (pricing is per device and allows multiple participants to attend using a single device). Your Fee Includes: A 120 minute virtual class plus a recipe pack including info on equipment needed. Our recipes are distributed manually. If you sign up within 24 hours of your class time, you may not receive the recipe in advance. We will attach it in Zoom Chat at the start of your class. Software Requirement: We are using Zoom for our virtual classes. If you aren’t already using Zoom you can download their free app for Windows, Mac, Android or Apple iOS hereUpon purchase, your meeting ID and password will be included in your Event Confirmation email – please be sure to save this information as you will need it to join your class.
