Virtual Cooking Class: Butchery & Cookery – Chicken

Join this virtual cooking class with our in-house Butcher Elyse together with Chef Kathryn to learn how to butcher a whole chicken, then prepare and cook it as we teach you some tricks and tips for butchering and cooking this homely but delicious bird! During your online cooking class we’ll show you how to break down as well as ballotine and spatchcock a whole chicken, then teach you how to make a classic French chicken stock with the carcasses. And we’ll walk you through how to prepare a Ballotine of boned out chicken as well garlic butter stuffed then breaded Chicken Kiev, with your chicken breasts.

Ingredients for Chicken Ballotine: 1 chicken (3.5 – 4 lbs), extra virgin olive oil, white wine or brandy, chicken stock, roux (butter and flour), lemon.

Ingredients for Pork & Mushroom Stuffing: ground pork, crimini mushrooms, extra-virgin olive oil, shallots, fresh thyme, Italian parsley, lemon, dry white wine.

Ingredients for Chicken Kiev: 4 chicken breasts, all purpose flour, eggs, breadcrumbs (we use Panko), paprika or cayenne, oil for frying (grapeseed or canola)

Ingredients for Chicken Stock: 4 raw chicken carcasses, carrots, celery, leek, onion, parsley stalks, fresh thyme, black peppercorns, bay leaf.

*Please note that if you are cooking along with us, you will need 2 whole chickens for the class. The chicken you use for the ballotine should be a small bird, about 4lbs.

Class Fee: $27.50 plus GST (pricing is per device and allows multiple participants to attend using a single device). Your Fee Includes: A 120 minute virtual class plus a recipe pack including info on equipment needed. Our recipes are distributed manually. If you sign up within 24 hours of your class time, you may not receive the recipe in advance. We will attach it in Zoom Chat at the start of your class. Please use the ingredient list above to shop for your class – if our ingredient list isn’t up yet, then the recipe is in the works and it’s coming very soon!

Software Requirement: We are using Zoom for our virtual classes. If you aren’t already using Zoom you can download their free app for Windows, Mac, Android or Apple iOS hereUpon purchase, your meeting ID and password will be included in your Event Confirmation email – please be sure to save this information as you will need it to join your class.

We use Zoom for our online classes. If you aren’t already using Zoom you can download their free app for Windows, Mac, Android or Apple iOS here.

Once downloaded Zoom will help you set up your free account then you’re ready to join us. Zoom will prompt you and ask for permission to use your devices, camera and audio, please accept the requests. Once logged in click “Join” from the home page and enter your Meeting ID and Password, which will be sent to you in your Event Confirmation.
