Virtual Cooking Class: Savour Ukraine – Nachynka (Cornmeal Casserole) with Kotlety (Meatballs) in a Mushroom Gravy

For the second in our Savour Ukraine virtual cooking class series, Chef Cindy Lazarenko will be revisiting a favourite dish from her beloved Edmonton restaurant Culina Highlands, but adapting it for your home kitchen. Cindy’s  Nachynka with Pork Tenderloin and a Demi-Glace Sauce was a customer fave in the Highlands, but equally delicious is this homier version of her Ukranian Cornmeal Casserole, topped with Pork Meatballs in a Mushroom Gravy. Join Cindy’s online cooking class for a taste of her Ukrainian heritage as you learn this favourite Lazarenko family recipe.

Ingredients for Nachynka: butter, lard (or canola oil), onion, cornmeal, egg, milk, vanilla (optional), chili flakes (optional), green onions (garnish, optional).

Ingredients for Kotleti: 1 lb ground pork, 1 lb ground chicken, turkey or beef, onion, mayo, egg, bread crumbs or Panko, garlic, milk.

Ingredients for Mushroom Gravy: butter, all-purpose flour, Dijon mustard, carrot, onion, mushrooms*, chicken, vegetable or beef stock, milk (2%, homo, half and half or a mix will work), lemon, fresh dill.

* traditionally button mushrooms or Cremini are used, but you can use any mushroom of choice – wild/gourmet, dried and rehydrated mushrooms. 

Class Fee: $25.00 plus GST (pricing is per device and allows multiple participants to attend using a single device). Your Fee Includes: A 90 minute virtual cooking class plus a recipe pack including info on equipment needed. Our recipes are distributed manually. If you sign up within 24 hours of your class time, you may not receive the recipe in advance. We will attach it in Zoom Chat at the start of your class. Please use the ingredient list above to shop for your class – if our ingredient list isn’t up yet, then the recipe is in the works and it’s coming very soon!

Software Requirement: We are using Zoom for our virtual classes. If you aren’t already using Zoom you can download their free app for Windows, Mac, Android or Apple iOS hereUpon purchase, your meeting ID and password will be included in your Event Confirmation email – please be sure to save this information as you will need it to join your class.
