Our in-house butcher Elyse is combining her talents with Chef Kathryn for this virtual cooking class on mastering Chicken. Together Elyse and Kathryn will teach you how to break down, trim and portion a whole chicken. During your online cooking class Elyse will teach you how to portion one chicken and spatchcock another. Then Kathryn will teach you how to make a stock with the necks and backs and how to marinate and grill your chicken two ways: we’ll marinate the portioned chicken with a Moroccan inspired combination of herbs and preserved lemon then serve it with a Herbed Couscous Salad and Yogurt Sauce; and we’ll head to Portugal for our Grilled Piri Piri Chicken, using our spatchcocked chicken and serving it with a Tomato & Mint Salad.

Essential Ingredients: 2 whole chickens.

Ingredients for Chicken Stock: raw chicken carcasses (necks, backs and wings etc.), carrots, celery, leek, onion, parsley stalks, thyme sprigs, black pepper corns, bay leaf.

Ingredients for Moroccan Inspired Grilled Chicken: full fat yogurt, ground turmeric, ground cumin, sweet paprika, cayenne, garlic, preserved lemon (optional, can use lemon zest and juice).

Ingredients for Herbed Couscous Salad: couscous, lemon, extra virgin olive oil, parsley, cilantro, arugula, cayenne, preserved lemon skins (optional), nuts (pine nuts, slivered almonds, pistachios).

Ingredients for Piri Piri Chicken: olive oil, red pepper flakes, garlic, lemon, red bell peppers, red chili peppers, red wine vinegar (or use lemon juice), Tomato & Mint Salad to serve (multi coloured cherry tomatoes, garlic, lemon, olive oil, fresh mint).

Class Fee: $30.00 plus GST (pricing is per device and allows multiple participants to attend using a single device). Your Fee Includes: A 2 1/2 hour virtual class plus a recipe pack including info on equipment needed. Our recipes are distributed manually. If you sign up within 24 hours of your class time, you may not receive the recipe in advance. We will attach it in Zoom Chat at the start of your class. Please use the ingredient list above to shop for your class – if our ingredient list isn’t up yet, then the recipe is in the works and it’s coming very soon!

Software Requirement: We are using Zoom for our virtual classes. If you aren’t already using Zoom you can download their free app for Windows, Mac, Android or Apple iOS hereUpon purchase, your meeting ID and password will be included in your Event Confirmation email – please be sure to save this information as you will need it to join your class.
