Virtual Cooking Class: French Classics | Braises – Choucroute d’Alsace

Get Cooking

A winter staple in Alsace in France, Choucroute is a robust and delicious combination of Sauerkraut cooked with fresh and cured Pork, and Potatoes. Join Kathryn and Aditya to learn how to make this hearty favourite using your own home-made Sauerkraut (we’ll send you the recipe), or store bought if you prefer. We’ll meet in the afternoon to start braising our pork ribs and sauerkraut with pork hocks that you’ll simmer until tender before the class. Then we’ll reconvene to finish our Choucroute, cook the potatoes, and talk about wine pairings as well, with a discussion of which Alsatian wines pair best with this regional classic, before we serve up our Choucroute for Sunday dinner.

Ingredients for Choucroute d’Alsace*: 1kg sauerkraut, 500g pork back ribs or baby back ribs, 500g Polish kielbasa (garlic) sausage, 350g German frankfurters, 1 large or 2 small smoked ham hocks (or use 1 lb boneless boiled ham), smoked ham hock cooking broth (or use pork or chicken stock), white wine, duck or goose fat, onion, granny smith apple, new potatoes, garlic, juniper berries, bay leaf, Italian flat leaf parsley, whole grain mustard, Dijon mustard (optional), horseradish sauce (optional), salt and pepper
