Virtual Cooking Class: French Classics | Braises – Navarin of Lamb

Once a month this Winter we’ll be offering a virtual cooking class focused on a classic French braise, starting with this class on Navarin of Lamb. We’ll meet in the afternoon to start our prep, brown the lamb, and get the braise under way. Then we’ll leave it in the oven until we reconvene to finish it with the classic vegetable garniture of carrots and pearl onions, and to finish our braised white beans (we’ll start them when we start the navarin) and pan sear some savoy cabbage, just in time for Sunday dinner! And if you’d like to enjoy a classic French hors d’ouevres in the afternoon, join us for our class on Gougères at 3:30pm too.

Ingredients for Navarin of Lamb: 1 kg boneless shoulder of lamb (cut into 2-3″ chunks), onion, anchovy fillets, garlic, white wine, chicken stock, fresh thyme, bay leaf, flat-leaf parsley.

Ingredients for Vegetable Graniture: pearl onions, baby carrots, purple-shouldered turnips, chicken stock, butter.

Ingredients for Cannellini Beans: onion, garlic, dried cannellini beans, extra virgin olive oil, lemon, celery, carrot, chicken stock, fresh thyme sprigs, bay leaves, Italian flat-leaf parsley.

Ingredients for Buttered Savoy Cabbage: savoy cabbage, butter.

Class Fee: $25.00 plus GST (pricing is per device and allows multiple participants to attend using a single device). Your Fee Includes: A 90 minute cooking class plus a recipe pack including info on equipment needed. Our recipes are distributed manually. If you sign up within 24 hours of your class time, you may not receive the recipe in advance. We will attach it in Zoom Chat at the start of your class. Please use the ingredient list above to shop for your class – if our ingredient list isn’t up yet, then the recipe is in the works and it’s coming very soon!

Software Requirement: We are using Zoom for our virtual classes. If you aren’t already using Zoom you can download their free app for Windows, Mac, Android or Apple iOS hereUpon purchase, your meeting ID and password will be included in your Event Confirmation email – please be sure to save this information as you will need it to join your class.

We use Zoom for our online classes. If you aren’t already using Zoom you can download their free app for Windows, Mac, Android or Apple iOS here.

Once downloaded Zoom will help you set up your free account then you’re ready to join us. Zoom will prompt you and ask for permission to use your devices camera and audio, please accept the requests. Once logged in click “Join” from the home page and enter your Meeting ID, which will be sent to you by email with your recipes.
