Virtual Cooking Class: Hand Pies – Calzone

Join Kathryn for this virtual cooking class on Calzone, one of our winter 2021 series on Hand Pies. You’ll start your class with the dough, then while it rises we’ll work on our fillings. There’s no sauce in a Calzone, but we’ll be making a spicy Arrabiata Sauce for dipping! And we’ll sauté up Mushrooms and Swiss chard to combine with Italian Cheeses for our filling. Plus we’ll spice up some ground pork for a homemade sausage filling in case you’d like to include some meat when you fill your Calzone. Once your Calzone is in the oven, we’ll finish your online cooking class with a simple green salad to enjoy on the side. A pizza stone is recommended equipment, though not essential.

To assemble Calzone: pizza dough, simple ricotta filling or mushroom and swiss chard filling, Italian sausage (homemade), Arrabiata Sauce, cornmeal for dusting.

Ingredients for Neapolitan style pizza dough: olive oil, active dry yeast, white sugar, ’00’ flour.

Ingredients for Ricotta Filling: ricotta, parmesan, fresh basil.

Ingredients for Mushroom & Swiss Chard Filling: shallots, garlic, crimini or portabello mushrooms, wild mushrooms (or more crimini or portabello mushrooms, if unavailable), fresh mozzarella, parmesan, ricotta, lemon, swiss chard, extra virgin olive oil, basil.

Ingredients for Arrabiata Sauce: garlic, red chili, fresh basil leaves, roma tomatoes (we use San Marzano), extra virgin olive oil.

Ingredients for Homemade Italian Sausage: 500 g fatty Pork shoulder, fennel seeds, coriander seeds, chili flakes.

Class Fee: $27.50 plus GST. Your Fee Includes: A 120 minute virtual class, including a virtual recipe pack with info on equipment needed. Our recipes are distributed manually. If you sign up within 24 hours of your class time, you may not receive the recipe in advance. We will attach it in Zoom Chat at the start of your class. Please use the ingredient list above to shop for your class – if our ingredient list isn’t up yet, then the recipe is in the works and it’s coming very soon!

Software Requirement: We are using Zoom for our virtual classes. If you aren’t already using Zoom you can download their free app for Windows, Mac, Android or Apple iOS here. Upon purchase, your meeting ID and password will be included in your Event Confirmation email – please be sure to save this information as you will need it to join your class.
