Join our Indian culinary expert Aditya Raghavan for this virtual cooking class on how to prepare a classic Lamb Rogan Josh. Traditionally made with lamb or mutton, Rogan Josh is a delicious example of Kashmiri cuisine featuring a fragrant curry sauce, spiced with Kashmiri Chilis. And during your online cooking class you’ll also learn how to make Addie’s Cast Iron Naan, perfect for dunking in your aromatic curry sauce, as well as a cool and refreshing Raita.
Ingredients for Lamb Chops Rogan Josh: 1 kg lamb shoulder (boneless), oil, asafoetida, cloves, black cardamom pods, green cardamom pods, cumin seeds, Kashmiri red chilli powder, mild paprika, sugar, fennel powder, regular (non-Greek), beef stock, ghee (clarified butter), rattan jot (optional rare ingredient only available at specialty Indian grocery stores**), green cardamom powder***
Ingredients for Kashmiri Broccolini: broccolini or rapini, red onion, tomatoes, Yukon gold potatoes (or fingerlings), mustard oil (or cold pressed canola oil), garlic, Thai green chili, mustard seeds, cumin seeds, turmeric powder, fennel powder.
Ingredients for Cast Iron Garlic Naan: all purpose flour, baking soda, plain yogurt, oil, garlic, cilantro, butter for finishing.
Ingredients for Walnut & Turnip Raita: turnip, walnuts, Greek yogurt (full fat), mustard oil or cold pressed canola oil, mustard seeds, cumin seeds, cilantro, mild paprika, asafoetida

*  can be found at specialty Indian grocery stores 

** the curry is meant to be red, if you cannot find ratan jot, you can use a touch of food colouring. (completely optional)

*** if you cannot find ground fennel or ground cardamom, grind them at home with a spice grinder

Class Fee: $27.50 plus GST (pricing is per device and allows multiple participants to attend using a single device). Your Fee Includes: A 120 minute cooking class plus a recipe pack including info on equipment needed. Please use the ingredient list above to shop for your class – if our ingredient list isn’t up yet, then the recipe is in the works and it’s coming very soon!

Software Requirement: We are using Zoom for our virtual classes. If you aren’t already using Zoom you can download their free app for Windows, Mac, Android or Apple iOS hereUpon purchase, your meeting ID and password will be included in your Event Confirmation email – please be sure to save this information as you will need it to join your class.

We use Zoom for our online classes. If you aren’t already using Zoom you can download their free app for Windows, Mac, Android or Apple iOS here.

Once downloaded Zoom will help you set up your free account then you’re ready to join us. Zoom will prompt you and ask for permission to use your devices, camera and audio, please accept the requests. Once logged in click “Join” from the home page and enter your Meeting ID and Password, which will be sent to you in your Event Confirmation.
