Join Kathryn for a taste of Morocco as she teaches you how to make one of our favourite Tagines with Chicken, Preserved Lemons and Green Olives. We’ll start the class by teaching you how to break down a whole chicken, but you can use pre-cut pieces too. Then we’ll brown the chicken, and as we do we’ll chop our onions and garlic so we’re ready to prepare the sauce. And while the Tagine is cooking we’ll make a quick and easy Herbed Couscous to accompany and show you how to make a delicious Beetroot and Orange Salad.
Class Fee: $40.00 plus GST (pricing is per device and allows multiple participants to attend using a single device).
Your Fee Includes: A 120 minute cooking class; a recipe pack including info on equipment needed; 7 day access to a recording of your class (you can extend your access to 30 days for an additional $5).
Upon purchase, your Zoom meeting link plus ID and password will be included in your Event Confirmation email – please be sure to save this information as you will need it to join your class.
Our recipes are distributed manually. If you sign up within 24 hours of your class time, you may not receive the recipe before the class starts. A summary of ingredients required follows:
Ingredients, Tagine of Chicken*: chicken legs bone in and skin on (or substitute chicken thighs, or a whole chicken broken down), grapeseed or canola oil, onion, garlic, ginger, white wine to deglaze (optional), saffron threads, ground ginger, chicken stock (optional), lemon juice, green olives, preserved lemon (or lemon puree or skins), cilantro, parsley
Ingredients, Herbed Couscous*: couscous, freshly squeezed lemon juice, extra virgin olive oil, chopped herbs of choice (parsley, mint, cilantro), pine nuts
* Please note that we will be discussing potential substitutions for ingredients during your class.

We use Zoom for our online classes. If you aren’t already using Zoom you can download their free app for Windows, Mac, Android or Apple iOS here.
Once downloaded Zoom will help you set up your free account then you’re ready to join us. Zoom will prompt you and ask for permission to use your devices, camera and audio, please accept the requests. Once logged in click “Join” from the home page and enter your Meeting ID and Password, which will be sent to you in your Event Confirmation.
