Join Kathryn for her virtual cooking class celebrating the taste of Thailand with this in depth look at how to make Thai curry paste from scratch and use is to create a fragrantly aromatic Red Thai Curry. We’ll be incorporating knife skills into tonight’s class, as we slice and dice, then focusing on how to season to create a balanced curry marrying Sweet, Sour, Salt, Bitter and Hot in perfect harmony. We’ll be serving our curry simply, with steamed jasmine rice.
Ingredients for Red Curry Paste*: dried red chilis, fresh red bird’s eye chilies, coriander seeds, cumin seeds, white peppercorns, garlic, lemongrass, cilantro, makrut lime leaves, galangal, Thai shrimp paste, sweet paprika (optional, for color).
Ingredients for Red Chicken Curry with Thai Eggplant, Squash & Peas*: can coconut milk, chicken stock (or vegetable, shrimp stock), red curry paste, coconut oil (or peanut, canola, grapeseed), 1 lb boneless chicken thigh (or you can use breast), peas (fresh or frozen, optional), Thai eggplants, kabocha squash, makrut lime leaves, fish sauce, palm sugar, Thai basil leaves, red bird’s eye chilis, jasmine rice, nam pla prik to serve (garlic, red Thai chilies, palm sugar, fish sauce, lime juice).
* We will be discussing potential substitutions for ingredients during your class
Class Fee: $27.50 plus GST (pricing is per device and allows multiple participants to attend using a single device). Your Fee Includes: A 2 hour cooking class plus a recipe pack including info on equipment needed. Our recipes are distributed manually. If you sign up within 24 hours of your class time, you may not receive the recipe in advance. We will attach it in Zoom Chat at the start of your class. Please use the ingredient list above to shop for your class.
Software Requirement: We are using Zoom for our virtual classes. If you aren’t already using Zoom you can download their free app for Windows, Mac, Android or Apple iOS here. Upon purchase, your meeting ID and password will be included in your Event Confirmation email – please be sure to save this information as you will need it to join your class.

Once downloaded Zoom will help you set up your free account then you’re ready to join us. Zoom will prompt you and ask for permission to use your devices camera and audio, please accept the requests. Once logged in click “Join” from the home page and enter your Meeting ID, which will be sent to you by email with your recipes.
