Will Kotowicz, Owner/operator of Meuwly’s, began his cooking career in 2000. Graduating from NAIT Culinary Arts in 2005, he spent most of his time cooking in Edmonton independent restaurants, including Jack’s grill, where his interest in meat preservation began. He worked with Duchess Bakeshop for 4 years, co-managing the kitchen and heading their savouries. In 2014, Will sought seam butchery and curing experience in the form of an internship under Craig Deihl, a multiple James Beard Nominated/semi-finalist Best Chef South-East and World Butchers Challenge team USA member, with numerous Good Food Awards for his cured meats. Will returned to Edmonton to pursue his love of butchery and curing. A Processing lead position at Provincial abattoir, Sangudo custom meat packers, eventually led to an opportunity in Operations management and R&D at the Food Processing Development Centre in Leduc. In January 2017, he started a CSA style charcuterie subscription, modeled after Deihl’s Artisan Meat Share program In Charleston, South Carolina, and aptly named it “Secret Meat Club”, as a precursor to opening Meuwly’s in July 2018.
