Join Kathryn Joel as we work with paring knives and chefs’ knives during this Introductory Knife Skills class. If you choose to use our knives you’ll be using 8-inch Henckel chefs’ knives, but we invite you to bring your own knives along if you’d prefer. During your class, we’ll be focusing on the following basic skills: Slicing and chopping onions and shallots; Pureeing garlic; Tomato concassé; Chiffonade of leafy herbs; How to dice, slice and julienne vegetables; Peeling round fruits; and Segmenting citrus fruits. And as if all of that is not enough, while you’re busy chopping and slicing, we’ll also be whipping up a hearty slice of Bruschetta, a Fennel & Citrus Salad and a Caramelized Onion Tart to enjoy with a glass of wine before we send you home, armed with the knowledge and skills required to wield your knives with greater confidence and finesse on your own.

Join Kathryn Joel in person for this taste of Italian Farmhouse cooking, and you'll experience a menu of simple but sophisticated Italian fare starting with a bruschetta topped with Borlotti Beans with Tomatoes & Sage. Next we'll stir up a pot of Melted Leek Soup, to serve with Parmesan Croutons. Then for your main course you'll learn to tray bake and roast Chicken Thighs with Potatoes & Porcini, and serve them with Pan Seared Winter Greens. Plus we'll be making Biscotti with dried fruits and nuts to serve together with an easy Limoncello Ice Cream for a rustically delicious dessert.
