Justin Vion
Justin Vion is the founder of Mr. Focaccia, a small-batch focaccia bakery based in Edmonton. What started as a hobby in his apartment quickly grew into a thriving local business supplying fresh focaccia to cafés, restaurants, catered events, and customers across the city.
Entirely self-taught, Justin has spent countless hours experimenting with dough, fermentation, and flavour combinations, believing that great bread comes from curiosity, patience, and a willingness to learn through trial and error. His approachable style makes bread baking feel accessible to everyone, whether it’s your first loaf or your fiftieth.
Outside the kitchen, Justin holds a Bachelor of Arts in Political Science from MacEwan University. He brings that same curiosity and love of learning into his baking, creating an experience that is as much about community and connection as it is about great bread.
In his classes, Justin shares the techniques, tips, and lessons that helped turn a passion project into a growing local business, with the goal of giving every participant the confidence to make delicious focaccia at home.
