Justin Vion has made hundreds of batches of focaccia on his quest to perfect his process, and in this class he shares the essentials of what he's learned. You'll mix a high-hydration dough from scratch, then stretch, fold, shape, and dimple your own focaccia to achieve its characteristic open crumb and crisp, olive-oil bottom. While your bread rises and bakes, Justin will talk you through toppings and you'll enjoy focaccia sandwiches and light refreshments together. You'll leave with your freshly baked loaf and the recipe to recreate it at home.
