INGREDIENTS
MAPO TOFU: soft tofu, ground pork, garlic, ginger, cooking oil (peanut, canola or grapeseed), sichuan peppercorns, chili bean sauce, fermented black beans, sugar, sesame oil, green onions, cornstarch, potato starch, baking soda, shaoxing cooking wine, light and dark soy sauce, white pepper, chicken or pork stock (optional)
CHILI OIL: cooking oil (canola or grapeseed), dried red chiles, sesame seeds, garlic, ginger, sichuan peppercorns, star anise, cinnamon stick, bay leaves
TO SERVE (OPTIONAL): steamed jasmine rice
