Let our dumpling expert Mai Nguyen whisk you away to Russia with her new class on how to make Pelmeni. Thought to have originated in Siberia or Ural, Pelmeni are meat-filled dumplings wrapped in a thinly rolled unleavened dough. Together with Mai you'll make your own dough then wrap it around a meat filling. Then you'll cook and serve your Pelmeni with melted butter, or optional sour cream or vinegar, for a delicious and comforting evening meal.

Ingredients, Dumpling Dough: all-purpose flour, egg
Ingredients, Beef Filling: 1lb ground beef (pork or chicken can be used as well), yellow onion, garlic, sugar
Specialty Equipment: 3 inch round cutter, instant read thermometer, digital weighing scale, pasta roller (recommended)

You’ll prepare two types of filled pasta with sauces. Begin with Ravioli filled with winter squash, served with a deliciously aromatic parsley and walnut chopped sauce. Next, make Swiss Chard & Ricotta Tortelloni, served with a simple but flavourful brown butter and sage sauce. This class is an ideal complement to our Pasta Basics class and is suitable for vegetarians.
