Join baker and distiller Owen Petersen, and master the art of crafting homemade sourdough bread in his popular Sourdough Basics class. Leveraging his expertise as the former head baker and owner of Prairie Mill Bread, Owen will walk you through the sourdough process, from feeding your starter to achieving perfect results baking in a Dutch Oven. During your class you'll prepare your own loaf of sourdough with Owen's guidance, then while your loaves rise, Kathryn will demonstrate and serve her sourdough Panzanella and a delightful seasonal soup, paired with slices of Owen's freshly baked bread. Savour the moment as Owen treats you to a refreshing French 75 champagne cocktail featuring Partyline Gin from his recent venture, Greenwood Distillers in Sundre. As the class wraps up, take home your handcrafted sourdough loaf, ready to be baked the following day, along with a jar of Owen's signature sourdough starter, empowering you to continue your bread-making journey with confidence.

Join Owen Petersen for his popular Sourdough Basics class and take the first step on your own sourdough journey. Former head baker and owner of Prairie Mill Bread, Owen will guide you through each stage of the process—from feeding your starter to baking a beautiful loaf in a Dutch Oven. You’ll mix and shape your own dough during class, with breaks between folds to learn and enjoy Kathryn’s sourdough Panzanella and Oven Roasted Tomato Soup. Owen will demonstrate how to bake loaves he's prepared ahead, which you’ll enjoy with a freshly made herb butter and a sumptuous bowl of Tomato Soup. Plus you'll learn how to make sourdough crackers using starter discard, then at the end of class, you’ll head home with your own loaf, ready to bake the next day, and a jar of Owen’s sourdough starter to launch you on your sourdough journey. NOTE: WE USE CHICKEN STOCK IN OUR TOMATO SOUP, BUT WE CAN ADAPT IT FOR VEGETARIANS WITH ADVANCE NOTIFICATION.
Join Chef Owner Kathryn Joel for a delicious day of Spanish tapas celebrating the flavours of the season. In this hands-on class, you’ll learn to prepare a vibrant summer gazpacho and the beloved tortilla española, along with a selection of classic tapas that showcase Spain’s rich culinary heritage. We’ll grill bread for pan con tomate—served with or without Serrano ham—stuff tender baby squid for calamares rellenos, and perfect pulpo a feira, Galicia’s iconic octopus dish. You’ll also master croquetas de bacalao, crisp salt cod fritters made with creamy mashed potato. With seasonal ingredients and a focus on essential techniques, this class is your invitation to savour the art of Spanish tapas, one bite at a time.
