Join Kathryn Joel together with sommelier and wine educator Margaux Burgess for this special Chef's Table class exploring the flavours of Tuscany on your plate, and in your glass! Kathryn will guide you through an evening of typical Tuscan fare and Margaux will talk you through a menu of Tuscan wines chosen to complement your meal. We'll start with Crostini Toscani, Tuscany's beloved Chicken Live Pâté crostini and we'll whip up a Borlotti Bean & Rosemary Crostini too, in case you don't enjoy liver. Next we'll toss together a delicious Panzanella, another Tuscan fave then we'll get you all involved as we make fresh pasta for Pappardelle, to enjoy with a Wild Boar Ragu. For dessert we'll be making Cantucci, simple almond biscotti typically enjoyed dunked in Vin Santo, a traditional Tuscan dessert wine.

Join Kathryn Joel as we work with chefs’ knives and and paring knives during this Introductory Knife Skills class. If you choose to use our knives you’ll be using 8-inch Henckel chefs’ knives, but we invite you to bring your own knives along if you’d prefer. During your class, we’ll be focusing on the following basic skills: slicing and chopping onions and shallots; puréeing garlic; tomato concassé; chiffonade of leafy herbs; how to dice, slice and julienne vegetables; peeling round fruits; and segmenting citrus fruits. And as if all of that is not enough, while you’re busy chopping and slicing, we’ll also be whipping up a hearty slice of Bruschetta, a Chopped Middle Eastern Salad and a satifsfying bowl of French Onion Soup to enjoy before we send you home, armed with the knowledge and skills required to wield your knives with greater confidence and finesse on your own. NOTE: ATTENDANCE IS LIMITED TO JUST 8 PARTICIPANTS FOR THIS 100% HANDSON CLASS. WE USE BEEF STOCK IN THE ONION SOUP BUT IT CAN BE ADAPTED FOR VEGETARIANS WITH ADVANCE NOTICE.
Join Chef Tiffany Sorensen for an immersive cooking experience that delves into the fundamentals of sauces and seasoning. Together with Tiffany, you'll learn to create flavourful dishes as you master classic sauces and essential seasoning techniques. Discover how to enhance flavours with salt, spices, fats, and acids to achieve perfect balance in your cooking. As you prepare a succulent roast chicken, you'll craft a fresh herb and burnt orange velouté, a vibrant vegetable purée, and a medley of seasonal vegetables to accompany it. Begin with a refreshing seasonal salad dressed with a homemade vinaigrette and a caramelized onion tart* featuring a rich béchamel sauce. Conclude the session with a luscious crème anglaise drizzled over seasonal fruit, leaving you equipped with a versatile skill set guaranteed to elevate your culinary creations at home. *Note: we'll prepare the pastry ahead for you tarts since the class is focused on Sauces, and Seasonings.
