Join Kathryn Joel and Larry Harris for this virtual cooking and baking class on how to make your own Burgers and Buns, together with homemade condiments. Larry will kick things off as he walks you through how to make his light and airy burger bun dough, then while your dough is rising and the buns are baking Kathryn will teach you how to grind steak trimmings from your local butcher and how to shape it into burgers. Plus you'll learn to make your own Rhubarb Ketchup and Quick Pickles to serve with your burgers too. Then we'll explore how to pan sear or grill a perfectly cooked and juicy burger to enjoy for your Sunday meal, sandwiched deliciously in your own homemade Burger Buns, together with the condiments you've made!

Ingredients for Hamburger Buns: bread flour, whole wheat flour, milk, instant yeast, sugar, eggs, butter, sesame seeds (optional).
Ingredients for Hamburgers: ground beef (5-7 oz per burger), sliced cheese of choice, mustard.
Ingredients for Quick Pickles: white wine vinegar, coriander seeds, lemon, fresh dill or cilantro, vegetable of your choice (cucumber, jalapeño, red onion).
Ingredients for Rhubarb Ketchup: rhubarb, orange, onion, extra virgin olive oil, garlic, dried ginger, ground cloves, bourbon, brown sugar, honey, tomato paste, apple cider vinegar, Dijon mustard, hot sauce.
Specialty Equipment: weighing scale, mandoline (optional), stand mixer

You’ll prepare two types of filled pasta with sauces. Begin with Ravioli filled with winter squash, served with a deliciously aromatic parsley and walnut chopped sauce. Next, make Swiss Chard & Ricotta Tortelloni, served with a simple but flavourful brown butter and sage sauce. This class is an ideal complement to our Pasta Basics class and is suitable for vegetarians.
