Join Kathryn Joel and Aditya Raghavan for this very seasonal class on Holiday Baking and you'll learn to make Stollen, Mince Pies and Linzer Cookies, three of our favourite festive treats. We'll start the class making the yeasted fruit dough for our Stollen, which we'll stuff with Marzipan following Aditya's delicious recipe. Then we'll make an easy Shortcrust Pastry and use store-bought mincemeat, amped up with extra brandy and fruit, to fill our Mince Pies, which we'll top with pastry stars. Plus to add a cookie to the mix we'll be making Linzer Cookies, Austria's famous cutout cookies that we'll fill with raspberry preserves. For an extra treat we'll teach you how to make our recipe for spiced Mulled Wine while we bake, the perfect tipple to enjoy with your delicious Holiday Baking! Then at the end of your class we'll send you home with a take home parcel of Stollen, Mince Pies and Linzer Cookies to enjoy in the days ahead.

Join Owen Petersen, former head baker and owner of Prairie Mill Bread, for his popular Sourdough Basics class—the perfect starting point for your own sourdough journey. Owen will guide you through each step of the process, from feeding your starter to baking a beautiful loaf in a Dutch oven. You’ll mix and shape your own dough during class, with time between folds to learn and enjoy Kathryn’s sourdough panzanella and oven-roasted tomato soup. Owen will demonstrate baking with loaves he’s prepared in advance, served warm with freshly made herb butter and a comforting bowl of our homemade soup. You’ll also learn how to make sourdough crackers using starter discard, and head home with a jar of Owen’s starter and a shaped loaf ready to bake the next day. Please note: our tomato soup is made with chicken stock but can be adapted for vegetarians with advance notice.
Join Chef Owner Kathryn Joel for a delicious day of Spanish tapas celebrating the flavours of the season. In this hands-on class, you’ll learn to prepare a vibrant summer gazpacho and the beloved tortilla española, along with a selection of classic tapas that showcase Spain’s rich culinary heritage. We’ll grill bread for pan con tomate—served with or without Serrano ham—stuff tender baby squid for calamares rellenos, and perfect pulpo a feira, Galicia’s iconic octopus dish. You’ll also master croquetas de bacalao, crisp salt cod fritters made with creamy mashed potato. With seasonal ingredients and a focus on essential techniques, this class is your invitation to savour the art of Spanish tapas, one bite at a time.
