Join Owen Petersen for his popular class on sourdough basics, and you'll learn to make your own loaf of sourdough choosing the flour combination of your choice, then you'll take your prepared loaf away with you to bake at home. At the start of your class, Owen will teach you how bake your sourdough loaf in a Dutch Oven using loaves he's prepared ahead. Then when you're not working on your loaf, Kathryn will be on hand to teach you how to make her Panzanella as well as a seasonal soup to enjoy with samples of Owen's freshly baked bread. Owen honed his baking skills during his years as the head baker and owner of Prairie Mill Bread in Riverbend, but nowadays he's busy making gin with his most recent venture, Greenwood Distillers in Sundre. So you'll finish your class with a taste of Owen's gin mixed into a French 75 champagne cocktail! Then you'll leave us with all the knowledge you need to feed and use your starter on your own, since you'll be taking home a jar of Owen's sourdough starter as well.

A good pizza is the ultimate in Italian comfort food, as perfect for a quick family meal as it is for a party. Join Kathryn Joel in person and learn to make your own pizza dough as well as how to build and bake both white and red pizzas, using some of our favourite toppings. We'll start the class making pizza dough, then while it rises we'll prepare the toppings for Sausage with Rapini and Prosciutto Arugula pizzas, and plate up an antipasta platter of Charcuterie, Warmed Olives and Whipped Ricotta too. Then once we've enjoyed our Antipasti, we'll build and bake our pizzas plus we'll finish the night with a simple but delicious dessert of Affogato, Gelato drowned in Espresso!
We're excited to bring back our Seafood Basics Bootcamp on the weekend of April 29th to 30th. Join Kathryn Joel from 10am to 3pm on Saturday April 29th and Sunday April 30th for an immersive experience learning how to cook seafood like a pro. Over the course of the weekend we'll show you how to Cure, Smoke and Pan Sear Salmon and Arctic Char, as well how to make Fish Cakes and Shrimp Burgers and how to cook Cod Fillets En Papillote. Plus we'll learn how to clean and cook Mussels and Clams and how to shuck Oysters, then serve them raw or baked, and how to pan sear Scallops too. You'll be tasting what we cook throughout the weekend, and enjoying a sumptuous seafood lunch both days you're with us. Then we'll send you home with an extensive recipe pack including instructions on where to source the best seafood here in Edmonton, and how to choose and store it.
