Join Owen Petersen for his popular class on sourdough basics, and you'll learn to make your own loaf of sourdough choosing the flour combination of your choice, then you'll take your prepared loaf away with you to bake at home. At the start of your class, Owen will teach you how bake your sourdough loaf in a Dutch Oven using loaves he's prepared ahead. Then when you're not working on your loaf, Kathryn will be on hand to teach you how to make her Panzanella as well as a seasonal soup to enjoy with samples of Owen's freshly baked bread. Owen honed his baking skills during his years as the head baker and owner of Prairie Mill Bread in Riverbend, but nowadays he's busy making gin with his most recent venture, Greenwood Distillers in Sundre. So you'll finish your class with a taste of Owen's gin mixed into a French 75 champagne cocktail! Then you'll leave us with all the knowledge you need to feed and use your starter on your own, since you'll be taking home a jar of Owen's sourdough starter as well.

Then indulge in the pièce de résistance: a succulent Grilled Rib Eye Steak, accompanied by our vibrant Chimichurri Sauce, char-kissed Grilled Veggies, and crusty Grilled Garlic Bread. Finally, our sweet finale combines tender Grilled Stone Fruit with a scoop of luscious Vanilla Ice Cream. Explore a world of brunch dishes with Chef Owner Kathryn Joel. We’ll begin in Spain with Pisto Manchego, a vibrant vegetable ragout served with perfectly poached eggs and finished with Manchego cheese, then head to North Africa for Shakshuka, eggs braised in a spiced tomato sauce. From Turkey, you’ll make Çılbır, delicate poached eggs served over garlicky yoghurt with a chilli butter, and we’ll make our own warm pita bread for dipping and sharing too. Throughout the class, you’ll learn essential techniques — from poaching eggs and balancing spice to building flavourful sauces — and gain the confidence to recreate these global brunch favourites at home.
