Join Aditya Raghavan and learn to make your own Paneer cheese then how to use it to cook up a wok full of Sichuan Paneer, together with stir-fried Hakka Noodles to accompany. The tradition of fusing Indian spices and ingredients with Chinese sauces and techniques goes back to Kolkata in the 1700's, when Chinese immigrant restaurateurs adapted their cooking to suit their Indian patrons. Nowadays Indian Chinese cuisine is a favourite across India and beyond, and we're excited to share these two classic preparations with you as you learn to cook your own Indian favourites, at home.

INGREDIENTS
PANEER:  whole milk, full fat Greek yogurt, apple cider vinegar (or substitute: white vinegar)
SICHUAN PANEER: dried Kashmiri red chilies, garlic, soy sauce, sugar, rice vinegar, ketchup, ginger, canola or grapeseed oil, corn flour, all purpose flour, paprika, honey, Red onion, green bell pepper
HAKKA NOODLES: dried wheat noodles, grapeseed oil, garlic, ginger, Thai chili (optional), celery, carrot, shallot, red bell pepper, green onions, soy sauce, rice vinegar, sesame oil, white pepper
