If you love Italian cooking, and crave new recipes for classic comfort foods, join Kathryn Joel for her newest class on Chicken Cacciatore (hunter style). You'll start your class learning how to break down a whole chicken, or you can use pre-portioned pieces if you prefer. Then you'll braise your chicken in tomatoes and wine with peppers, mushrooms and herbs. While your Cacciatore is braising, you'll make a delicious appie of White Beans with Fried Sage, served on Crostini. Plus you'll learn to prepare Polenta to serve with your Cacciatore.

Ingredients, Chicken Cacciartore: 1 small chicken, 100 g pancetta, garlic, rosemary, extra virgin olive oil, onion, celery, red bell peppers, cremini mushrooms, dry white wine, can tomatoes (we use San Marzano), chicken stock, black olives, Italian flat-leaf parsley, chili flakes, rosemary, olive oil
Ingredients, Soft Polenta: polenta, parmesan cheese, butter
Ingredients, White Bean Crostini: white beans (cooked from dried or use canned), shallot, garlic, fried sage leaves (sage leaves, olive oil), lemon, extra virgin oil, crostini to serve (baguette, extra-virgin olive oil, garlic (optional))
Ingredients, White Beans (if you decide to cook from dried): dried white (cannellini) beans, onion, fresh thyme, bay leaf, parsely, chicken stock (or use water)
