INGREDIENTS
SCALLOPS: large sea scallops, olive oil, butter, white wine, fresh thyme, lemon, capers, tarragon and / or Italian parsley, pine nuts (optional)
CAULIFLOWER PURÉE: cauliflower, whipping cream, butter, lemon, nutmeg
TO SERVE (optional): brussels sprouts, pancetta, butter, balsamic vinegar
