Join Kathryn Joel for this online class and learn how to make your own homemade Pita Bread flatbreads, together with Swordfish and Lamb Souvlaki Skewers. You'll start your class making the dough for your pita breads, then we'll marinate and prepare our swordfish and lamb skewers (you can substitute alternative proteins) and whip up Tahini and Tzatziki Sauces and a Green Salad. Finally we'll cook our skewers on the grill, sharing grilling tips and tricks as we do, so they're ready to serve for dinner with our Green Salad and Pita Breads.

Ingredients, Pita Bread: all purpose flour (unbleached recommended), active dried yeast, skim milk powder, olive oil, Za'atar (sesame seeds, fresh thyme, sumac)
Ingredients, Lamb Souvlaki: 1kg lamb leg or shoulder, olive oil, garlic, lemon, red wine vinegar, dried oregano, dried mint, metal or wooden skewers
Ingredients, Swordfish Souvlaki: 600g swordfish steak, extra-virgin olive oil, lemon, dried oregano, red onion, kalamata olives, cherry tomatoes, wooden skewers, fresh oregano, lemon
Ingredients, Tzatziki: Greek yogurt, cucumber, dill, mint, garlic, lemon, extra virgin olive oil
Ingredients, Tahini Sauce: tahini, lemon, garlic

Join Kathryn Joel online and learn to make Arroz Negro, a Catalan version of Paella that's flavoured and coloured with Cuttlefish Ink. A variation on a typical Seafood Paella, the Cuttleish Ink (more commonly called Squid Ink) is stirred into the stock adding a black hue and distinctive flavour. We'll be finishing our Arroz with roasted red peppers and chopped parsley then serving it with a Saffron Aioli, for a pop of dramatic colour too!
Join Kathryn Joel online and you'll learn how to make her delicious warm Duck Breast Salad, light enough for a hot summer night but substantial enough to enoy as the main course for your evening meal. Together with Kathryn you'll prep and pan sear duck breasts, then serve them sliced and still warm over a tossed salad dressed with a Raspberry Balsamic & Walnut Oil Vinaigrette, finished with rapsberries and candied pecans.
