We're excited to launch our first ever Seafood Basics Bootcamp on the weekend of August 6th to 7th. Join Kathryn Joel from 10am to 3/4pm on Saturday August 6th and Sunday August 7th for an immersive experience learning how to cook seafood like a pro. Over the course of the weekend we'll show you how to Cure, Smoke and Pan Sear Salmon and Arctic Char, as well how to Salt Bake fish and cook it En Papillote. Plus we'll learn how to clean and cook Mussels and Clams and how to shuck Oysters, then serve them raw, or grilled, and how to pan sear Scallops. You'll be tasting what we cook throughout the weekend, and enjoying a sumptuous seafood lunch both days you're with us too. Then we'll send you home with an extensive recipe pack including instructions on where to source the best seafood here in Edmonton, and how to choose and store it.

Join Chef Owner Kathryn Joel for an evening of Italian home cooking, as you learn to make three classic dishes, each a satisfying meal in its own right. We'll begin with Crespelle Fiorentina, Italian crêpes filled with ricotta, spinach and pecorino, finished with a rich cream reduction and baked until golden. Next, you'll stir up a luscious Italian Sausage and Fennel Risotto, learning the technique that makes risotto so rewarding to get right. And to finish, we'll braise a sumptuous Pollo alla Cacciatora, chicken slow-cooked with pancetta, tomatoes, red peppers, mushrooms and herbs in the classic Italian hunter's style.

Join Chilean-born Chef Jose Montan, Chef de Partie at Edmonton's acclaimed Olia Ristorante, for an evening of classic Argentinian cooking. Chef Jose will guide you through Empanadas Salteñas served with Chimichurri, a Tomato, Burrata & Basil Salad, and two versions of the Milanesa — the beloved Argentinian cutlet inspired by Italian immigrants who brought their cotoletta alla milanese to South America. You'll make a Chicken Milanesa with Prosciutto & Arugula and a Beef Milanesa with Gorgonzola, and Jose will also talk you through how to build a Milanesa sandwich, a street food staple across Argentina.
