Ingredients, Roasted Cornish Game Hen: 1 Cornish Game Hen, garlic, bay leaves, fresh thyme, onion, celery, carrot, chicken stock (or use water), cooking oil (olive oil, grapeseed or canola)

Ingredients, Stuffing: carrot, celery, onion, fennel bulb, cooking oil (grapeseed or canola), sun dried cranberries, sun dried apricots, apple, sourdough bread, butter, sage leaves, fresh thyme, chicken stock, eggs

Ingredients, Sauerkraut Mash: potatoes (russets or yukon gold), onion, bay leaf, sauerkraut, butter, whipping cream, nutmeg

Ingredients, Cranberry Orange Chutney: fresh cranberries, apple cider vinegar, red onion, orange, lemon, ground ginger, nutmeg, cinnamon, allspice, sugar, extra virgin olive oil

Ingredients, Roasted Vegetables: red bell pepper, red onion, fennel bulb, squash, brussel sprouts, carrots, parsnip, garlic, fresh sage and thyme, dried basil and oregano, extra virgin olive oil

Ingredients, White Wine Mushroom Gravy: onion, garlic, olive oil, mushrooms (cremini, oyster, wild...), dry white wine, stock (from roasting hen), butter, fresh thyme, fresh sage, butter, flour
