Discover the art of sausage making with our expert instructor Elyse Chatterton, a past member of the Canadian World Butcher Challenge team. In this hands-on workshop Elyse will draw on her experience as a British craft butcher, taking you on a journey from meat grinding to creating delicious English sausages. You'll start by learning how to blend flavours using Elyse’s Pork, Fennel & Apple Sausages as an example. Then, you'll get creative as you customize your own unique sausage flavours, working in pairs as you learn to adapt Elyse's base recipe then stuff your fillings into natural sausage casings. We'll also whip up some irresistible Sausage Rolls using Elyse's Cumberland Sausage been. Whether you're equipped with tools or not, Elyse will share her pro tips on crafting sausages at home and help you choose the best equipment for your sausage-making adventures. We'll enjoy a sumptuous lunch with Sausage Sandwiches and Sausage Rolls, and you'll even take home the sausages you make to savour the fruits of your newfound skills. Don't miss this exceptional opportunity to learn from a true expert and embark on your own sausage-making journey with us!

Join Chef Owner Kathryn Joel for an evening of Italian home cooking, as you learn to make three classic dishes, each a satisfying meal in its own right. We'll begin with Crespelle Fiorentina, Italian crêpes filled with ricotta, spinach and pecorino, finished with a rich cream reduction and baked until golden. Next, you'll stir up a luscious Italian Sausage and Fennel Risotto, learning the technique that makes risotto so rewarding to get right. And to finish, we'll braise a sumptuous Pollo alla Cacciatora, chicken slow-cooked with pancetta, tomatoes, red peppers, mushrooms and herbs in the classic Italian hunter's style.

Join Chilean-born Chef Jose Montan, Chef de Partie at Edmonton's acclaimed Olia Ristorante, for an evening of classic Argentinian cooking. Chef Jose will guide you through Empanadas Salteñas served with Chimichurri, a Tomato, Burrata & Basil Salad, and two versions of the Milanesa — the beloved Argentinian cutlet inspired by Italian immigrants who brought their cotoletta alla milanese to South America. You'll make a Chicken Milanesa with Prosciutto & Arugula and a Beef Milanesa with Gorgonzola, and Jose will also talk you through how to build a Milanesa sandwich, a street food staple across Argentina.
