In our online class on Seafood Paella Kathryn Joel will take you through every step on the road to achieving perfectly cooked rice and seafood as you master the skills needed to cook this fabulous one-pot meal at home. We'll discuss the types of paella rice available as well as choices in seafood. Our Paella will feature Clams, Squid, Shrimp and Veggies, plus we'll discuss adding Cuttlefish Ink for an Arroz Negro. If you'd like to add Chorizo, that's an option too! While your paella cooks you'll also learn to throw together a couple of quick and easy (and optional) tapas.

Ingredients, Paella with Seafood: paella rice (calasparra or bomba), fish or shellfish stock (or use clam juice), 1/2 lb shrimp (in the shell), 1 lb squid, 2 lbs mussels or clams (or a combination), white wine, onion, red peppers, tomatoes, garlic, saffron, smoked paprika, peas (fresh or frozen), Italian flat leaf parsley, lemon, extra virgin olive oil
Ingredients, Saffron Aioli: eggs, oil (cold pressed canola oil or mild olive oil), garlic, Dijon mustard, saffron, lemon

Then together we'll make two different filled pastas with sauces. We'll begin with an easy Ravioli, filled with Winter Squash and served with a Parsley & Walnut "Pesto" Sauce.
