Just in time for your holiday parties, the recipes in Kathryn Joel's class on Puff Pastry Basics are designed for easy entertaining. Using store-bought all butter puff, you'll learn to whip up a Caramelized Onion & Goat's Cheese Tart that you can cut up to serve as Canapés, or enjoy in heartier slices for dinner or lunch. Next we'll assemble a tray of Cheese Straws, elevated with a twist of prosciutto and aged cheese. Then you'll learn to make Palmiers, both savoury and sweet. A classic French pastry bite, Palmiers are guaranteed to capture your heart.

Ingredients, Caramelized Onion & Goat's Cheese Tart: extra virgin olive oil, unsalted butter, onions, fresh thyme, goat's cheese, whipping cream, truffle oil, tarragon leaves (or chives), lemon, all butter puff pastry
Ingredients, Parmesan & Fresh Thyme Palmiers: all butter puff pastry, parmesan, fresh thyme, egg (optional egg wash)
Ingredients, Classic Palmiers: all butter puff pastry, granulated sugar, cinnamon (optional), orange (optional)
Ingredients, Cheese Straws: all butter puff pastry, hard or semi-firm cheese (parmesan, pecorino romano, gruyere, manchego, aged cheddar etc. or use a blend)

Join Kathryn Joel for her online class on how to make Chicken Parmigiana, a beloved Italian-American combination of breaded chicken breast, tomato sauce and cheese. You can serve your Chicken Parmesan as it comes, atop spaghetti or in a sandwich if you prefer! We'll be serving ours plated, with a green salad on the side.
