Join Aditya Raghavan, our in-house expert on Indian cuisine for his delicious virtual cooking class and Vegetarian menu, featuring homemade Paneer Cheese and a Chickpea Curry. You'll start your online cooking class making your own fresh Paneer then you'll use it to cook Saag Paneer, a classic dish of Paneer simmered in a spinach sauce. Then Addie will teach you his version of Chana Masala, a beloved curry of Chickpeas in a spiced tomato sauce. And to round out your menu, you'll make a Saffron Rice, the perfect accompaniment to Addie's dishes.

Ingredients for Channa Masala: onion, ginger, garlic, passata, red chili powder, turmeric, asafoetida (optional), ground, ground cumin, garam masala, pomegranate seeds, dry mango powder(amchur), cold pressed canola oil, butter, green chilis, cumin seeds, cilantro, black cardamom, cloves, cinnamon stick, black tea dust
Ingredients for Paneer: whole fat milk, full fat Greek Yogurt, apple cider vinegar (substitute: white vinegar)
Ingredients for Saag Paneer: spinach, paneer, onion, ginger, garlic, Indian green chilies (or Serrano chili), tomatoes, ghee, whipping cream, cold pressed canola oil, cumin seeds, cloves, bay leaf, asafoetida (optional), coriander seeds (powder), kasuri methi (dried fenugreek leaves), ground turmeric, red chili powder, whole red chilies, mild paprika
Ingredients for Saffron Rice: saffron threads, ghee, basmati rice, water or chicken stock
Essential Equipment: mortar & pestle, blender

Join Kathryn Joel online and learn to make Arroz Negro, a Catalan version of Paella that's flavoured and coloured with Cuttlefish Ink. A variation on a typical Seafood Paella, the Cuttleish Ink (more commonly called Squid Ink) is stirred into the stock adding a black hue and distinctive flavour. We'll be finishing our Arroz with roasted red peppers and chopped parsley then serving it with a Saffron Aioli, for a pop of dramatic colour too!
Join Kathryn Joel online and you'll learn how to make her delicious warm Duck Breast Salad, light enough for a hot summer night but substantial enough to enoy as the main course for your evening meal. Together with Kathryn you'll prep and pan sear duck breasts, then serve them sliced and still warm over a tossed salad dressed with a Raspberry Balsamic & Walnut Oil Vinaigrette, finished with rapsberries and candied pecans.
