Join Aditya Raghavan for the start of our festive season with his newest virtual cooking class on Indian Party Bites. Addie will be drawing on his expertise in both Indian Cooking and Cheese Making in this class featuring Aloo Tikki (fried potato patties stuffed with peas), served with a Green Chutney, and Stuffed Mini Parathas, with a Yogurt Dip. You'll also learn to make your own Paneer then dress it up for a delicious and aromatic Paneer Snack. As well as expanding your repertory of recipes for entertaining this season, the three dishes combined will make a delicious and hearty meal, perfect for your Sunday supper.

Ingredients, Aloo Tikki: russet potatoes, frozen green peas, red chilli powder, coriander powder, dry mango powder (amchur), ginger, cumin, cilantro, mint, serrano chillies, bread crumbs, cornstarch (optional)
Ingredients, Cilantro Mint Chutney: cilantro, mint, ginger, green chilis, ground cumin, sugar, lime
Ingredients, Keema Mini-Parathas: ground beef, onions, ginger, garlic, serrano chillies, coriander powder, cumin powder, cinnamon powder, cloves powder, green cardamom, fine-milled whole wheat flour (preferable, available as "atta" in Indian grocery stores), ghee
Ingredients, Spiced Cucumber-Mint Raita: 2% or non-fat Greek Yogurt, english cucumber, cold -pressed canola or regular canola oil, black or brown mustard seeds, fennel seeds, red chili powder, ground cumin, mint leaves

You’ll prepare two types of filled pasta with sauces. Begin with Ravioli filled with winter squash, served with a deliciously aromatic parsley and walnut chopped sauce. Next, make Swiss Chard & Ricotta Tortelloni, served with a simple but flavourful brown butter and sage sauce. This class is an ideal complement to our Pasta Basics class and is suitable for vegetarians.
